You can't technically "undo" it, but if a sim was killed because of the lightning bolt you can bring that sim back to life without cheats. When the grim reaper comes, click on him and click "plead for loved one". It is 50% chance that the grim reaper will bring your sim back to life. If something caught on fire because of the lightning, make sure you get the fire department there as fast as possible. If the fire is put out soon enough your furniture will not be destroyed.It's also a good idea to keep all your sims inside during a thuderstorm so they won't get hit by lightning.
