You don't really unlock it. Durin the levels, you'll find things called 'pipo camera' in all the levels (except bosses, of course) as long as you haven't caught or scared he monkeys to the point that their helmet is flashing red, then you step on the platform (It's got footprints on it, it's easy to find) and you record them for a while, and it'll automaticaly become a movie in the Simian Cinema.
Simian means 'ape' (as in monkey), and as such has no antonym.
Casi's true introduction to the series was in Ape Escape 1, where she would tell you how many monkeys you had to capture upon entering the level. She was not named at this point. She has become a named, playable character in Ape Escape: Pumped and Primed, and Ape Escape: Million Monkeys. You can also unlock sketches of her in Ape Escape 2.
Simian refers to having ape, human, or monkey like qualities. It can generally be used to define a monkey or an ape when you can't tell the difference. Examples- "The simian like creatures hurled themselves at the intruder." "I only caught a glimpse of it. It looked kinda simian."
