It would be best not to use credit cards without matching identification. If you must, make sure that the back of the credit cards are signed and do not include notations such as "See ID." As long as the card is signed and the signature on the receipt matches the signature on the back of the card, merchants cannot require identification as a condition of acceptance. If the signatures do not match, the merchant is supposed to take further steps to ensure the card is not being used fraudulently Short of having a marriage license or name change paperwork available, there is simply no way to know that Jane Doe is Jane Roe's maiden name, and the merchant may refuse the card.
