There's typically 3 ways of recording flight within FSX. Two of which are software related.
'FRAPS' is the most popular game recording software, however on some mid-level systems it can kill the frame rate. There is also 'GameCam' which I have yet to use. Both products are payware, however do have limited recording times/capabilities in the free editions.
Some flight sim enthusiasts have recorded their flights with a camcorder in front of the TV screen. The resulting video often seems grainy, however if you have a flat screen TV with good resolution, sometimes the video turns out pretty decent.
Note: You may have heard of FS Recorder, however FS Recorder does not record actual video. It only records the planes movement data (IE; speed, pitch, yaw...etc) much like a black box does on a real aircraft. FS Recorder is used to record one flight and then playback as AI aircraft for simulated multi-player sessions.

Lock On is a modern flight simulator focused on battle. In this game you can fly 8 different aircrafts in a realistic environment. Eagle Dynamics have developed the simulator.

A simulator gives you the feel of the actual aircraft, but it won't be the real thing. For example, a simulator will contain all controls which an actual aircraft does, but it will have a display running some video and you have to move controls accordingly. If you crash in simulator you get one more chance to make a new start. Real aircraft is a real thing. You crash, you are dead (Maybe along with some more guys and burning up millions of dollars).
Well, if you want the viewers to see what you're doing, I recommend the virtual cockpit view, or sometimes I go to the outside view where you can see the entire plane.
