There is no single 's' in Japanese.
The letter's come in 'pairs' if you get what I'm saying; such as - ra, ri, ru, re, ro - which exceptions of course of a, i, u, e, o, n, shi & tsu!
Do you want to write S within a name... ?
But if not you may want to go with the nearest 'sa, shi, su, se, so' if that fits?!

Traditional Japanese writing and most writing in letters are written up and down but going left to right: l s i o k e I t t ' h s I s although, if you do write from left to right, you don't have to write it up and down. So you can write it like the normal English way if you want.
