As with all Greek gods, descriptions vary between accounts and mortals are likely to never fully understand them in certain terms. If the Greek God Apollo exists, he mainly has an effect on the sun, but also art and music in particular.
Apollo is foremost the god of the sun and light, or by some accounts, he is what we call the sun, riding his chariot across the sky. He is followed by his twin sister Artemis, the moon. That said he may affect the amount of light in the world and is an important factor in many aspects of life affected by the sun, especially crop growing and warmth.
Apollo is also the leader of the 9 Muses, and is often portrayed with a Lyre, a string instrument. Him and his muses inspire artists to produce great works in poetry, writing, drama, dancing, astronomy, and history. It is thought that they affect artists' work through whatever means.
By some accounts Apollo is also associated with medicine, plague, the ability to see the future (oracles), physical beauty, and knowledge.
