Pure substances have their own freezing point. Water for instance has a mp of 0 degrees Celsius, and the molecules will form bonds at that temperature, creating a solid. The same applies to metals although generally metals have a significantly higher mp.

The solid is formed by inter-particular bonds forming. These bonds can be between atoms, molecules or ions, hence the word inter-particular. The form of these bonds can be due to dipole-dipole interaction either permanent or dispersed.

add Helium is the only exception, as solid Helium is not known.
