Well actually, a camel protects ITSELF, but I dont know. I dont think they have that many natural predators.
Presumably if there were many camels who wanted to protect THEMSELVES, they would work together.

They don't actually spit. It's actually vomit (the camel's stomach contents). Camels do this to distract or surprise anything that the camel feels to be threatening. Therefore stop messing with camels!
