It depends on what it's sensing. Thermistors are used to measure temperature. Other sensors depend on physical actions. Bump sensors are triggered when an object pushes the plate until the sensor is triggered.

Sounds like the sensor is bad. The sensor may be sending bad data to the computer. The computer assumes that the information is correct. The computer then uses this bad information to calculate fuel delivery, etc., therefore causing poor performance. By unplugging the sensor, computer receives no data, the computer relies on data from other inputs/stored data to calculate proper output values. Try replacing the sensor. Hope this helps.
