The head of an engine is cooled from passages in the block. When you blow a head gasket the coolant gets by the passages and into the combustion chamber. Sometimes the coolant doesn't go into the chamber but goes into the oil pan causing the engine oil to turn a milky brown color (looks like a chocolate milkshake).

Theres a couple of things to check, you may have a blown head gasket letting coolant enter the combustion chamber, you might have liquid coming out of the exhaust or just a sweet smell to the exhaust, or your radiator cap is bad and the fluid is being pushed out of the overflow can by the steam from the radiator. This could also be an indicator of a blown gasket as depending on where the gasket failed it could be over pressurizing the coolant system or drawing coolant in to the cylinder ( or both ). Try the new radiator cap first, if no help check the spark plugs, the one on the cylinder where the gasket is blown will have coolant on it.
