Histology is the study of tissue and cytology is a study of cells.
Cytology: Is the branch of biology that studies the structure and function of Cells along with their enclosed Cytoplasm [this is just as realistically called Biochemistry], and Histology: Is the branch of biology that studies the structure and function and the transformation of animal and plant Cells into Tissues.
These two are examples of microscopic anatomy or histology.

Microscopic Anatomy
Histology is the study of microscopic anatomy at the tissue and cell level while human anatomy is the study of gross tissue and anatomy.
Histology is the branch of biology that involves the study of tissues. Cytology is a closely-related specialty.

Histology is the branch of biology that is the study of tissues. Cytology, a closely-related discipline, is the study of cells.

The difference between cells and organisms is that cells are tiny individual structures which together, can make up an organism. However, cells can sometimes be their own organism such as a bacteria; a single celled organism. Where as, organisms such as humans are made up of many cells!
In a broad sense, perhaps. They're better described as hierarchical levels of organisation.
