The point of Buddhist practices is to become a buddha, in other words, to realize one's inherent "buddha-nature." We (supposedly) misuse our minds, which is why our lives are infected with the three poisons of greed, hostility, and delusion. These poisons cause us to lead lives filled with suffering (dissatisfaction, trouble, sorrow).
Meditation changes the way we use our minds. Done properly, it replaces those poisons with clarity, insight, and present-moment awareness, and these lead to abiding peace and ease. Someone who lives this way lives a skillful life of nirvana.
So meditation is beneficial because it enables those who practice it properly to reduce the suffering in their lives. Meditation is essential because the Buddha emphasized that it is critical that each person train his or her own mind--as opposed, say, to merely adopting some set of beliefs--in order to enjoy direct experience of nirvana. He said that it is impossible to experience nirvana without meditation.

Perhaps different Buddhist tradition would have have differing views. From my own perspective meditation creates the conditions and training to rest in the true experience of mind released from the limitations of attachment and aversion.

They don't have any essential role. On the other hand, they are usually lovely, quiet, and foster a contemplative mood. In them, there is typically a recognition of both form and emptiness. Form is represented by lush vegetation and emptiness by free patches -- often of stone -- without vegetation. Often, too, there is water, which symbolizes the impermanence of Buddha-Nature. .
There is sitting meditation. There is walking meditation. There is the Zen garden, and other Zen practice pursuits (archery, tea cerimony, calligraphy, painting, chanting...) The Zen garden is used to represent the simplicity and the harmony of life. Zen priests are also used by Zen priests to improve the concentration while by raking the garden.

For me, meditation is the very center of religion. The word religion means for me scripture, ritual, rites of passage, tradition, and so forth. Meditation leads to a direct contact with the divine. Religion without meditation is like a river without water. Dry. Desolate. Empty of life.
