Mercury is a metal that accumulates in the muscle or meat of the fish, (just like humans) if the fish is high on the food chain like sharks, tuna and sword fish, they continue to eat smaller fish with mercury in it's system, faster than their body can excrete it and the amount of mercury continues to build up in their system.
It will eventually poison the fish causing sluggish movements, decrease growth, deformities, reduced appetite, decrease in size and an increase in birth defects or the complete loss of the ability to spawn.
If the source of the mercury is removed the fish will recover fairly rapidly, similar to the recovery in humans.
