Air is the enemy of food. My guess is that the oil surrounds the food and prevents air from touching it, thereby preserving it.

I preserve chillies in olive oil... I cut the chillies up then soak overnight in white wine vinegar. Drain the cvinegar off then put the chillies in jars and fill with olive oil. They are delicious. Hope this helps you.
