Everything has what is called a half-life, it is the time in which a substance, such as carbon halves in quantity. All life forms have a set ratio of carbon to other substances in their bodies and by seeing how much this carbon has depleted they can see how many years have gone by since death (the carbon is replenished while alive so the fossil can only be dated after death in this way).
