Scientists know from laboratory experiments what color objects are at different high temperatures. By comparing the color of the Sun (a somewhat bluish white-hot) they can determine how hot the surface of the Sun is.

The temperature of the center of the Sun is known because of what scientists can calculate and guess at, knowing that the Sun's center undergoes a constant nuclear fission.

Basically, by an application of gas laws. From the size of the Sun, and its mass, it's possible to calculate the core temperature required to keep it from collapsing. Note: there's some disagreement on what the core temperature really is; some of this comes from different estimates of the Sun's total mass, and some of it comes from various levels of sophistication in the exact equations used to calculate the temperature.

Every body emits radiation. Every radiation gives out spectrum. For every body we will observe the spectral lines. The astronomers gets the idea of the temperature of the star by studying the spectrum pattern of that star. example. by studying the spectrum pattern of the sun, we can estimate the temperature of the sun.

The star's surface temperature can be obtained from its color, basically. The star's temperature further down (e.g., its core temperature) need to be calculated based on models, using our knowledge of physics, including things such as pressure, thermal conductivity, properties of light, nuclear fusion, etc.
