Carbohydrates provide energy. Excess energy that is not used will turn into fat. Why? Because the energy storage for carbohydrates is limited, whereas for fats it isn't. Thus, the more excess energy you consume, the more fat cells you will have to store that energy.

In general, all animal energy storage is as fat.
In particular, insulin triggers fat cells to ingest sugar (and convert it).
It doesn't only excess calories do. When you go over your calorie limit you gain weight. Doesn't matter if they come from sugary foods or healthy stuff. A calorie is a calorie is a calorie.
It's an organic compound that's converted into energy, or if energy isn't a problem, stored as fat.
But it's not more fattening than any other type of calorie source, e.g. fat

The carbohydrate intake has nothing to do with your menstruation. Most of the articles in your food does not affect the menstruation.
