The gall bladder stores bile salts which help break down fats. It helps to make the large fat molecules into smaller one. This allows the enzymes called lipase to change the fat into smaller parts that the body can use. If the gall bladder is removed, a fatty meal is a big problem as most of the fat is undigested. It might sound like a good idea but you do need some fats. The other problem is that this large load of fat causes big fatty diarrhea.
