In older versions of Microsoft office, there were drop down menus that contained all the options.

That changed with the office 2007, ribbon based interface was introduced. Instead of drop down menus, the ribbon has TABS. Every time a TAB is selected like insert, home, view- related options within that tab show up.

That is why the interface appears changed. The change is not permanent, once you click the Home tab again, the previous options become visible again.
