If the water is inside a space craft and is floating because there is no gravity in a normal air pressure situation , it will form a round droplet and stay that way unless it hits something. if you let it go in space as water it will immediately dissipate. if it is ice then it may stay that way depending on the temperatures that can be attained as a result of its position in space.
