By measuring how fast the carbon dioxide is formed, we are measuring the rate of the reaction.

Assuming the solvent you are using is water, the reason why alka seltzer releases gas is because it is porous and will release CO2 as it reacts. Salt only dissolves in water, and it does not create gas.
