As far as I know (and have seen them used for), you use Flash Drives to transfer data from one computer to another.
i.e.
Someone creates a slide presentation at their home computer and they need it by a deadline BUT they will be leaving this computer for a while. They insert the flash drive into a port and put the slide onto it. Then, they take where they are going and put it on a computer. Now there is a copy of the file on that computer and they can edit it from that computer. When they leave, they replace the finished file and overwrite the data of that file on the flash drive, remove it from the computer and go home. Then, they replace it into their computer once again overwriting the previous file with the same name and can finish it.
