Butter really doesn't evaporate. You can melt it, and the fat solids float to the top and the water and the rest sinks to the bottom. When you skim the fat off the butter what you are left with is clarified butter. It is used in place of regular butter and mostly served in restaurants for seafood. I guess in theory you could heat it until it reduces, but, I don't think there would be any use for the leftovers.

Mennonite Momma, here. Canned, Evaporated Milk has about a: 50% fat content. Heavy Whipping Cream has to be kept: refrigerated, & only has a fat content of: 36% - 40%.. Canned, Evaporated Milk is great for making butter!

i always have trouble thickening evaporated milk for a chocolate sauce. i recently got a magic bullet with the flat blade for whipping. after boiling the chocolate, evaporated milk, sugar, and butter on the stove and cooling it i put it in the bullet and whipped for a bit. it worked wonders. :) finally i have thick, rich, and creamy chocolate sauce!!!
