Through distillation. Crude oil is heated in large towers, the heavier fuels have a higher boiling temperature than the lighter ones. This factor is used to separate them out in the tower, with the lightest fuels such as propane being condensed out towards the top of the tower. Gasoline or petrol is near the middle in terms of how heavy it is so is extracted near the middle of the tower.
