Paleontologists come up with hypotheses about the fossil life found in rock from observations of bone, claws, teeth, size, footprints, etc. These hypotheses can be tested through observation and camparison, microscopic analysis, chemical analysis, kind of formation they're found in and so on. When a consensus of opinion is achieved on a hypothesis, it is considered a theory, until a better provable hypothesis comes along. It's the scientific method. Paleontologists are considered scientists in research of the fossil life record.
