The cup/wine reminds us that Christ's blood was shed for the forgiveness of sin. The Bible says without the shedding of blood there is no forgiveness of sin.

The bread represents His body. Jesus said "I am the bread of life. He who comes to Me shall never hunger, and he who believes in Me shall never thirst". - john 6:35. So the bread reminds us that Jesus gives life to those who come to Him in repentance. Also as we break the bread we remember that Jesus' body was broken when He died as a sacrifice for sin.

In regard to the Passover, the death of Christ is a picture of the Passover lamb sacrificed by the Israelites just as the blood of the lamb painted on the door posts saved the children of Israel from God's judgment so the blood of Christ will save - those who believe - from God's judgment to come.

During Passover the Jewish people were commanded by God to slaughter an unblemished, male, lamb. This lamb's blood, when smeared over the doorway of a house, protected that family from death. For the Eucharist Jesus is the sacrificial lamb, unblemished with sin. In order for the Gates of Heaven to be re-opened to us, we needed eternal satisfaction for our sin (Adam and Eve's sin).
