Over the thousands of years that beer has been produced, brewers have been collecting the yeast after fermentation, thus evolving yeast into strains that are particularly good for making beer.

The individual yeast strains are kept on slants in laboratories by companies such as White Labs.

A brewery may re-use the same yeast several times but over several generations of reuse it starts to mutate which can make the beer have undesirable flavours. At this point, the brewery will get some fresh yeast cells from the laboratory. The cells are made into a starter by mixing them with a small sample of wort (water and sugars (maltose)). The results from this are then mixed with a bigger sample of wort until enough yeast has been generated to pitch into the fermentation vessel.
