Depends on the species and age. Chameleons under like 4-6 months shouldn't be left without food for more than a day, adults may be fine for like 2 days probably as long as they have access to water, also species which live in harsher conditions (e.g. veileds) could survive for a longer period but still I wouldn't leave a chameleon without food for more than a day especially if it's not fully grown.

Some females that I had wouldn't eat for 10 days prior laying eggs and then took them sometimes 3 days to lay eggs, so 13 days with no food, yet still dig out a hole, lay eggs, cleaned it all up, and she was fine, so I would say, if you go for vacation once a year for couple of weeks and cannot have someone to feed your chameleon, then 2 weeks should be just fine, but you have to have light and misting set up.
