Coffee-Mate liquid will usually last 2-3 weeks after opening. If left unopened, it can be stored for several months in the fridge. You will know when the coffee mate has gone bad, because it will curdle, change color, or smell badly. You can usually tell when it is starting to go bad, well before this point because the creamer will not integrate with the coffee immediately, and will leave "rings" on top of the coffee until it is stirred in. However, it is still safe to consume at the "ring" stage. It can be stored even longer in the freezer, but this is not recommended as some separation of the product may occur after thawing.

Always go by the expiration date whenever possible. Otherwise you can keep it up to 24 months in powdered form unopened and liquid form 9 months unopened.

Check the expiration date on the jar. Usually instant coffee is good for about two years unopened. It doesn't really "go bad", but the flavor might be much different longer than that.
