Egg whites will not remain whipped for any appreciable amount of time without being baked. Egg whites should be whipped immediately before being combined with other ingredients, then promptly baked.
Typically you should beat a meringue till it forms stiff peaks. Be sure that you avoid getting anything but egg whites in the bowl, it will form much better without any trace of egg yolk.
A meringue is a mixture of stiffly beaten egg whites and granulated sugar (or sugar syrup) then cooked. Soft meringue is used as a swirled topping for pies, puddings and other desserts such as baked alaska. It's baked only until the peaks are nicely browned and the valleys golden. Hard meringues begin by being piped onto a parchment-lined baking sheet and rounded. They're then baked at a very low temperature (about 200°F) for as long as 2 hours and left in the turned-off oven until completely dry. Hard meringues often have a center depression that is filled with ice cream, custard, whipped cream and fruit.
Once it is assembled and put in the oven, it only stays in long enough to lightly brown the meringue. This should only just begin to melt the ice cream. Another method is to use a french meringue which cooks the egg whites before you put them on and you brown the tips of the meringue with a propane torch and this keeps it much cooler.
If baked Alaska is left in the oven too long, the meringue will burn and the ice cream center will melt. If it is not left in long enough, the meringue will be raw.
It takes about 2 days before the meringue begins to break down if you leave it covered at room temperature; it breaks down faster in cooler temperatures. If you are not a fan of the meringue, you can certainly skip adding any to the pie and use whip cream instead.
Bake at 350 degrees for about 15 min. or until the meringue is nice and brown and dry to the touch.

You should bake your meringue soon as you can after whipping it, otherwise it will deflate and the texture will be all wrong. 2 hours in the fridge is too long, it would deflate.
Although not a scientific method, if the egg gets past your nose, it's good. That means that if the old egg whites don't smell rotten, you can probably use them, as long as they will be thoroughly cooked - as they would be in a cake. You should beat the whites to make sure they will stiffen before proceeding with the cake.

Making MeringueOur users share their meringue-making methods:Preheat the oven to 250 degrees Fahrenheit. Pour 3 egg whites (at room temperature) into a mixing bowl. Mix on high until you get a soft peak. Add 1 cup sugar and a dash of cream of tarter. Mix on high again until you get a stiff peak. At this stage, add some vanilla extract (or any other flavoring). Then, put the mixture into a pastry bag and squeeze out into shape. Swirly shapes work best... the bigger, the better. Lower the oven temperature to 195 degrees and place the cookies in the oven for 1.5 hours. After that, switch off the oven and leave the meringues in overnight. (This recipe take a long time - but it truly pays off.)To make a meringue topping for a cake:Take 3 egg whites; 1/2 tsp. vanilla; 1/4 tsp. cream of tartar; 6 tbsp. sugar.Beat egg whites with vanilla and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff and glossy peaks form and all sugar is dissolved. Bake at 350 degrees for 12-15 minutes (or until meringue is golden).
