If stored properly it can hold its pH for several days, but as soon as the water leaves the ionizer it will begin to lose its properties. It is similar to rubbing your feet on the carpet to shock someone, when you rub your feet back and forth a charge is built up, but when you touch someone the charge dissipates, the pH of the ionized water starts to dissipate as soon as you poor it. There are specially designed bottles that can store the water and maintain its properties as long as possible.
