How about LaGrande, Oregon? It's small, picturesque and has Eastern Oregon University lcetaod right in town. It's closer to Boise, Idaho than to Portland and has a large mountain range nearby. On the west side I might suggest Monroe, Oregon. It's also small and is pretty close to Western Oregon university. In southern Oregon I might consider Jacksonville, it's close to Southern Oregon Univ and is very quaint, you should be ble to find plenty of pics as well.
