This depends on the content of the mail. If it is a letter, its anywhere from 3 to 5 days. If it is an AirMail package you are receiving, This could take up to 8 days for it to arrive depending on various factors including customs, shipping delays on either end etc.

No. China uses postal codes, but Hong Kong does not. I assume the mail is sent to another Chinese city and then delivered to the recipients in Hong Kong.
