For good traditional fruit cake, I usually bake mine in September.

The process takes most of the day as I make both light and dark fruit cake.

Once the cakes are baked and cooled I wrap them in cheese cloth, drizzle them with an once & a half of brandy for the light and navy rum for the dark, then seal them in tins and put them in a cool place. Hence my waiting until September (it is too hot where I currently live to make the cakes earlier.

Every two weeks I open the tins and turn the cakes over, adding more brandy/rum as needed. By Christmas they are wonderful and I have yet to have anyone turn down a slice. In fact this year I made extra on request of friends and family.

Just for the record... you can make your fruit cake later than I do, if I'm pressed for time I sometimes wait until October and once didn't get them in the tin until late November, however, the longer they age the better they taste.

well, it depends on the mix/ ingreadients- usually 45mins. to a hour. If you are making one from scratch and don't know how much time, follow the basic baking guidelines to a recipie for the same kind of cake you want to make online.

you can make Christmas cakes months ahead

More information:

"Christmas Cakes" are also known as Fruitcakes. They are heavy and dense, and contain dried fruit that keep the cake moist without spoiling. However, they must be kept in airtight packages, such as the traditional tins.

Other types of cake, such as light sponge cakes or cakes made from mixes, can be kept for a week or more when covered completely with a rich frosting.

Easy peasy. Make a vinilla cake that says "Merry Christmas" on it with red icing for base, and green and red for the letters.

this would depend on the kind of cake you are making, it usually tells you in your recipe book at what temperature and how long.

If stored properly, a cake will last for about a week or so in the refrigerator. Wait to decorate with icing and details, as they will spoil after 2 or 3 days.

As long as you do not see mold growing on it, you can keep a Christmas cake as long as you like. But don't try to eat it if it becomes moldy.

What chemical baking change cookies has?

Assuming that the cookies have flour, eggs, sugar, and a touch of baking soda or baking powder. The heat will: > Cause the protein in the eggs to firm up ( it is much like polymerization of a plastic), This is what holds the cookie together > The sugar and starch will react with oxygen in the air...this is what gives the cookie a brown color ( too much oxidation and you have burnt cookies!) The baking powder or baking soda ( depending on recipe) will cause the cookie to rise by releasing carbon dioxide....the same gas in soda. Baking soda will need something acidic (tart tasting = acidic) to start the reaction..like buttermilk. Baking powder only needs the presence of a liquid. Double acting baking powder releases carbon dioxide when it comes in contact with a liquid and then again when exposed to heat. A little thought about this will indicate that if you let a batch of cookie dough sit around all (or at least most) of the carbon dioxide will work its way out and you will have flatter cookies than if you made them right away.
