Steak tartare should only be prepped right before eating and isn't really designed to be made ahead. Leftover steak tartare isn't in anyone's best interest. I found one recipe that suggests grinding the meat, mixing the ingredients, then refrigerating for only 2 hours. Another recipe said to grind the meat no more that two hours ahead and -of course - to keep it refrigerated.

It depends on what you are worried about. Before 1970 the seam on cans was sealed with solder which had a lot of lead in it which leached into the food. Also, the inside of the can was galvanized to prevent rusting which gave the food a metallic taste. Those are no longer a problem. Some people warn that the inside of refrigerators are a hotbed of bacteria and the leftover stuff in the can has bacteria in it and putting it in the fridge makes a bacteria festival. But this applies whether in the leftover is in the can or a dish. As for myself I put plastic wrap over the mouth of the can and keep it in the fridge no longer than three days after opening.
