It roughly depends on the game mode. Another factor is the size of the map for bomb sites (Rush) or how many flags you have obtained (Conquest). My longest match was 1 hour and 20 minutes long.

It all depends on what game you prefer. If you like an very realistic type shooting game, got for Battlefield 3. However, most games on Battlefield are all about objectives. Also, Battlefield 3 isnt a quick game. If you have only something like 15-20 minutes free time, Battlefield isnt the game to go on. A match will last a long time if both teams are very good. Call of duty - Well, if you want a 10 or less minute game, call of duty is the game. Call of duty isnt as realistic as Battlefield but COD is the most popular (for now). Its a personal option and only you should pick on. For me, I'll be getting both.
Burning time on a match will depend on how long the flint is at the end. An average match will burn for about 5 seconds.
Battlefield 3 does not record a replay of an online match, that is audio/video. It does however record the statistics of the players in a match, to be precise Battlelog, a component of the game does this. This means a player with a Battlelog (Origin / EA) account can log into the website and view the kills, deaths, score, accuracy and so forth of all other player in that game.
