When I bartended, our closing time was 1am. Bartenders were required to closeup the bar. Our duties included putting away newly washed glassware, stock liquor, ice or put away bottled beer, count out register/tips, mop bar area, wipe down bar, empty/clean ashtrays, etc. We often had 2-3 bartenders so we would start the process early, and be completed by 2-2:30a.
