The turkey should rest for about 1 hour to and a hour and a half.
How much rest a race horse should get between races is dependent upon the horse and his health. Usually race horse trainers will give their horses about 3 weeks (21 days) between races. Some horses are able to be raced more or less frequently.
The pulse rate of an adult horse at rest averages 30-40 beats per minute (bpm). A pulse rate of 50 or higher in an adult horse at rest may mean the horse is in physical distress.
How far a horse can travel in 12 hours with a 190 lb load and how often he needs to rest and for how long is a difficult question to answer because that answer depends on many variable factors including: Size of the horse Fitness and health of the horse Terrain traveled Weather and other mitigating factors Training and experience of horse and rider

You fail to mention if your horse is lame. When a farrier trims a horse's foot he will most likely take off a little of the horse's frog. This keeps the hoof healthy and encourages growth of new tissue. Once it is trimmed the frog should barely touch the ground when the horse puts a foot down. This keeps blood flowing thoughout the frog and maintains hoof health. If the farrier has trimmed off too much it may cause lamness and you may even see a little blood, depending on how short he was trimmed. If this is the case and your horse is not dead lame, just a little 'ouchy' give him a week of rest on very soft footing, grass being the best, or a softly bedded stall. If you see no improvement after this amount of time you should call your vet and chat with him/her about the situation. It's possible it may be something different than the frog or may be the frog and something else in combination.
Yes, it is possible to ride the same horse twice in one day as long as the horse is fit and healthy. It is important to provide adequate rest and care between rides to ensure the well-being of the horse.

it's time to dismount from the horse. At the end of a hard ride, you should dismount your horse and let it rest.
