Defrost in the refrigerator for safety. I'm seeing recommendations for anywhere from 6 hours per pound up to 10 hours per pound. That would mean a total of 30 to 50 hours. A two-day thaw should be a safe amount of time.

Allow at least 24 hours in the fridge and in it's sealed wrapper.
