You forgot to define whether pounds or kilos but cool for 20 minutes a pound and leave to stand, covered with foil for another 20 minutes before carving... That's for rare... For more well done add 20 minutes cooking time and stand for 30 minutes.... Leaving it to stand relaxes the meat fibres preventing it from being chewy. Try to carve it thinly for the same reason... So have your carving knife as sharp as a razor!
