I've accidentally put several times too much paprika in dishes before, to no real ill effect. it might make it a bit dry tasting, so a bit extra water and oil may help if it's chilli peppers, then i believe there's something about putting half a lemon in for a few minutes and then taking it out, but I've never tried it
