First, no Native American group would attempt to slaughter a herd of Buffalo, it would be wasteful (which is a basic sin, under most religions).
Second, the actual 'hunt' varied in its time. But do not forget that many rituals about the hunt, both pre and post, had to be observed. In some cases this could take weeks.
Third, There were two basic hunting patterns used for Buffalo: the first older pattern was before horses and involved driving the Buffalo off a cliff or into a ravine. Later after the introduction of Horses and Firearms, the hunt changed to a selective kill type of hunt.
Fourth, ritually (for most tribes) warriors who showed bravery in the hunt were awarded special cuts of meat; this could include the liver, heart, etc, and it was normally their choice to give these awards to elders within the community.
Fifth, I have read 3 or 4 books concerning the diets of Native Americans, and these were taken from original writings in the 16 and 1700; in none of them do they remark on this supposed ritual of eating the heart of a kill.
