It was explained to me in Combat Engineer school many moons ago. Metal detectors emit weak magnetism at a specific gauss and power. It recieves this same information on another part of the detector head. This variance in the two spikes the detector if it meets the threshold and a reading is discovered. Dialing in the detector allows the user to decide what they want to detect and sometimes at what distance they want to be able to detect it.

To see gauss lines get some iron filings and put them on a table - put a magnet under the table and move it under it. Those lines where they gather are gauss lines.
