It is based on the aerodynamics of the wing. The engineers will select the best wing that fits the main mission of the aircraft they are building in order to take full advantage of the wing. Some wings are more efficient when flying slow and some are better when flying fast. Wings that help you go fast tend to stall sooner when flying slow than wings that help you go slow for example.
