I would imagine they would be okay as long as you fed the crab well, if the crab gets hungry well - the snail would be fair game - since crabs don't really care whether it is an animal or a plant that they eat and in the water they feed on mollusks or what ever they can get a hold of.

Hermit crabs are pretty safe creatures. When handling them out of their habitat, be calm and they shouldn't pinch you. If they do pinch you, stay calm and wait for the crab to feel comfortable again so they will let go. Another thing you could try to get them to let go is slowly lowering your hand into their habitat so they smell it and will feel more at ease. I don't recommend spraying the crab with water if it is pinching you. That normally scares them causing them to hold on longer.
