GB stands for Gigabyte, which is a unit of measurement to show how much memory your iPod will have. Therefore, the 8gb will hold LOADS less music, apps, vids etc. than a 32gb iPod. Also you can get more apps because you have a built in microphone.So when it says 1st generation it means 8gb and when it says 2nd generation it means 32 or 64gb. But when you are talking about the 3rd generation the 32 and 64GB have better graphics and a faster processor then the 8 GB.
They hold so much more than an mp3 player, and they also have a touch screen and can hold games, apps, and they can be used to watch videos as well as all of that stuff.

Finding out the number of apps it will hold depends on how much space it takes up. It also depends on how much media content(music, movies, etc.)is already on it. So, basically, there is no definite answer.
the ipod nano with the camera is newer but doesnt hold apps but the ipod touch brings out new versions like the 3rd generation
