A canter is called a three beat gait because you hear three distinct sounds. This is because two of the horse's feet hit the ground at the same time. There are two possible combinations of feet in the canter, remember that near = left and off = right. The LEFT lead: Near fore, off fore and near hind, off hind. The RIGHT lead: Off fore, near fore and off hind, near hind.
Technically it is 4 but horse people (Equestrians) say 3, because the 4th is when none of the horses hoofs are touching the ground.
If you are going to canter/lope in a circle to the right for example:
The horse's back left leg moves first;
Then the front left and back right move at the same time;
Then the front right fallows...
...After the front right hoof hits the ground, all the horse's legs are brought under him in a moment of suspension.
All this happens very fast, and is difficult to see unless you are watching it in slow-mo

If you mean which gait(walking, troting, cantering, galloping) had four beats, it is the walk. The trot has two, the canter has three. I do not know hoe many the gallop has.

Horses canter over the courses because it is the easiest gait for them to collect, bring they're hind quarters underneath them and jump. If the distance to the jump is correct, the horse will jump in good form and more naturally. Also, the canter is less bumpy than the trot so it makes the rider more comfertable.
