Mankind and all animals were created to eat only vegetation (Genesis 1:29&30 ) and did so for over a thousand years. That changed after the flood, when meat was added .
There were no dietary restrictions on Noah and his family when they first came off the ark, (Genesis 9:3&4) so the reference to clean and unclean involved acceptable animals for sacrifices and burnt offerings that would need to be made to God.
Later, when the Mosaic Law covenant was formed, an explanation of what was 'clean and unclean' was laid out.
(Deuteronomy 14:3-8) "You must eat no detestable thing of any sort. This is the sort of beast that YOU may eat: the bull, the sheep and the goat, the stag and gazelle and roebuck and wild goat and antelope and wild sheep and chamois; and every beast that splits the hoof and that forms a cleft into two hoofs, chewing the cud among the beasts. It YOU may eat.
Only this sort YOU must not eat out of those that chew the cud or that split the hoof, cloven: the camel and the hare and the rock badger, because they are chewers of the cud but do not split the hoof. They are unclean for YOU. The pig also, because it is a splitter of the hoof but there is no cud. It is unclean for YOU. None of their flesh must YOU eat, and their carcasses YOU must not touch.
The reason for this surprising find is that there are actually two stories of Noah's Ark in The Bible, written by two different authors and cleverly interleaved so that the result appears to be just one, rather complicated story. In the same way as there are two answers to this question, we can also find that one story has the flood subsiding in just forty days, while the other says that it lasted one year. We do not know the names of the two different authors of the biblical stories of Noah, and they are now called the Priestly Source and the Yahwist:

Although most casual Christians confidently answer "Two each species, male and female" the real answer is found in Gen. vii. 2-3, 8, which states that Noah took into the ark seven and seven, male and female, of all kinds of clean beasts and fowls, and two and two, male and female, of all kinds of beasts and fowls that are not clean. Interestingly this means most Australian animals (kangaroos, koalas, plait, echidnas etc would only have two representatives as they are traif.
Noah took 7 pairs of clean animals (the ones they could eat). And then he took one pair of unclean animals (the ones they couldn't eat). Similarly for the birds.
According to Genesis 7:2, Noah was commanded to bring on seven pairs of every kind of clean animal, a male and its mate.
