This depends on what kind of crackers you are referring to, as well as on how the crackers are crushed (i.e. coarse versus fine crumbs).

According to Cook's Thesaurus http://www.foodsubs.com/Crumbs.html 14 graham crackers = 1 Cup crumbs so, 12 graham crackers = 3/4 C + 1 Tbs (approximately)
1 It would also be helpful to know what a cup of graham cracker crumbs weighs. My box of crackers is 14.4oz. I could estimate what portion of the box to use if I know how much a cup of crumbs weighs.

A box of stuffing is usually between 1.5 and 2 cups depending on the shape and the breadcrumbs. More finely ground crumbs would be closer to 1 or 1.5 cups. Large crumbs or cubes would be more likely 2+ cups.
One 11-oz box of Nilla Wafers yields 3 cups of crumbs. (I used my food processor to grind a whole box of Nilla Wafers into fine crumbs and this is what I measured.)
