You can eat it immediately, though it's better to let it sit for about 10 minutes to allow the meat to "rest" so that the juices can settle and balance out. Also, it won't be quite as hot when you cut it.

The quality of the meat is only going to go downhill after the first day. Although it can be OK for longer than this, try to use it up within 2 or 3 days for best flavor. If you know you can't use it all, freeze it ASAP. That should give you an extra month or so. Make sure you wrap it tightly to prevent freezer burn. Or freeze it with some broth.

For best flavor, you should use the turkey within a few days of cooking. Safeness cannot really be determined without tests and would depend on proper handling and storage, so you should use good sense and use it as soon as possible. Make sure you thoroughly reheat the turkey before serving.
